Favorite Go-To Recipe

I love cooking, but I don't think I talk about it enough on my blog. I regularly try new recipes, which thankfully my husband is a good guinea pig for. As long as it doesn't have raw tomatoes, he will happily eat it. And as much as I love trying new recipes, there are a few old standbys that make it into our dinner rotation pretty frequently.

Korean BBQ beef was one of my favorite meals that my mom would make when I was younger. I don't know how "traditional" or really Korean it is- but I love it, and it's super quick and easy on a night you don't feel like doing much.

Korean BBQ Beef
  • Pound of beef sliced thin (I always get the packages labeled "stir fry" beef from my local grocery store)
  • 1/4 cup soy sauce
  • 3 T sugar
  • 1 T vegetable oil
  • 1 t ground black pepper
  • 1-2 cloves of minced garlic (I normally add 2. But I really love garlic)
  • 3-4 green onions sliced thing
  • Stir fry vegetables- carrots, snap peas, squash, red peppers- really whatever you like!
  • Rice
Mix together the soy sauce, sugar, oil, pepper, garlic and onions and marinate the beef. I normally mix them all in a ziplock bag and throw it back in the fridge. Try to marinate for at least an hour; but I've done it for only 20 minutes and it's still delicious.

Cook your rice, as this normally is the longest part. I pop it in my rice cooker- and it takes about 20 minutes. While rice is cooking, stir fry the beef first. Normally takes about 5 minutes to cook the meat through, but not over cooking it (tough meat is no good!). Set the cooked meat aside; stir fry the veggies. I used sesame oil to cook these- but vegetable or canola or whatever works just as well.

When the veggies are cooked (I like a tender crisp- so about 5 minutes or so), add the beef (and all the delicious sauce) in to the veggies and stir together. Serve over rice and enjoy!

Plus all the veggies look so pretty!
